why did they have to spread manure in the wind?

once on the cooking channel, a beautiful irish lady showd us how to make mashed potatoes with cabbage and corned beef mixed in.

in her lilt, she told us you should steam potatoes, never boil them "because then you lose the wonderful patatah flavah"

you spread it on a windy day, all even on the field

1) maybe wind augments even distri-POO-tion.
2) maybe the poet just wants to remind the reader/listener that it's always windy on Prince Edward Island.
3) maybe #2 because he just needed a word like "windy" to make the line work with the rhythm of the poem.
